Hosted at our Hillside vineyard, this small-group experience invites you to explore the treasures of this historic estate - the 1850's old-vine Shiraz vineyards,  and the heritage listed Springbett's Winery. Get up close with some of the region’s most significant old-vine plantings as we share the stories behind them: how they came to be, why they matter, and what it takes to keep them thriving today. Along the way, you’ll discover the balance between tradition and innovation, and how careful, modern vineyard practices help preserve vines that have stood for generations. The Marryatville Hotel’s Trilogy Series is three evenings in 2026, each one bringing a landmark winery to the table alongside a menu crafted to match the character of their wines. Adelaide Hills. McLaren Vale. The Barossa.  Paddock to Plate has sourced the majority of the menu directly from the land around it, drawing on Lyndoch producers, Hutton Vale Farm, Gumshire, The Dairyman, La Dame’s award-winning aged goats’ cheese, and honeycomb from a local Barossa beekeeper.
